A new season is here, which means the nights are getting shorter and dinner needs to be done quicker.
Dinner on the assembly line is my favorite kind of meal prep; tacos, burritos, and these super easy salsa chicken tostadas made with Foster Farms Simply Raised Chicken (without antibiotics) never cease to make my family smile, all while filling up their hungry, rumbly tummies.

Their livelihood depends on it, and our health and well-being benefit tremendously by purchasing locally raised and farmed fresh ingredients. It brings our family closer together as we eat the harvest that is so close to us, and our community.
Foster Farms is delivered fresh from local ranches in 48 hours or less, whereas other chicken brands are trucked from across the country, which could take up to a week to reach us here on the West Coast. That doesn't sound very fresh to me, and fresh is important.
Easy Salsa Chicken Tostadas
Serves 4-6
Total time: 30 min
Ingredients:
- Foster Farms Simply Raised Chicken (without antibiotics) (3 breasts)
- Fresh salsa fresca
- Tomatoes
- Lettuce
- Avocado
- Refried Beans
- Sour Cream
- Cheese {cheddar}
- Crispy Tostadas
Directions:
Add Foster Farms Simply Raised chicken without antibiotics (3 breasts) to Dutch oven/pan.
Season with salt and pepper. Shake on some cumin.
Add 15oz of salsa.
Cover.
Heat pot on stove. Bring to boil. Lower heat to medium. Cook for 15-20 min. Stir the salsa. Flip the chicken. Check temp. Lower heat to low. Cook for 5-10 min. Check internal temp to 165ºF.
While the chicken is cooking, prep your other ingredients:
- Chop tomatoes
- Shred lettuce {or buy shredded in the bag, like I did.}
- Shred cheddar cheese.
- Mash Avocado.
- Stir sour cream.
- Dish out your refried beans.
Not only do we consciously shop local, but we also like to know that the animals we eat were raised under nice conditions, and all Foster Farms fresh chicken products are American Humane Certified! That gives us such peace of mind. I think it actually makes the chicken taste better.
Your chicken is done. Your toppings are prepped. Now, you can chop or shred the chicken to whatever consistency you prefer. I put mine in the food processor and pulsed a few times. Oh my goodness, it was so quick and easy.
You can always use food scissors, two knives, or take it out and chop it on a cutting board, in case you don't have a food processor.
Your entire family will love this meal, if you share it with them. Otherwise, they'll never know that you ate the entire pot of Foster Farms Simply Raised Chicken by yourself. Cluck cluck.
