Since I haven't been eating meat, I'm always looking for ways to fill up. I mean, really hearty meals so I don't get hungry again in like 20 minutes.
Things I've noticed: I eat more cheese and dairy than ever before. I've often wondered if I go vegan with what will I replace the dairy? Kefir? I'm a bit skeptical. I also wonder about my cholesterol from time to time..
Anyway, when there's no time to bake a casserole, shove the ingredients in a tortilla.
What does that look and taste like? Well..

Let's start with the greens. We buy the frozen broccoli from Costco. It comes with 4 1-pound bags, and only takes 5 minutes to cook in the microwave.

Next up, our favorite cheese is sharp cheddar from Tillamook. Use whatever cheese you prefer, but know that cheddar and broccoli are always a winning duo.
I shred my own. I used to buy pre-shredded, but I'm trying to cut down on wood shavings in my food.
Take it up a notch: Season your cheese. {Thank you so much, Alton Brown!}
I used some granulated garlic, smoked paprika, and Lawry's seasoned salt. A few shakes of each, and toss it around.
Sprinkle some cheese on the tortilla before flipping! It's going to make a crispy cheese coating. |

The Fancy Quesadilla Series
Recipe:
- 1 Flour Tortilla {we buy uncooked ones from Costco, YUMMM}
- Shredded Cheddar Cheese {personal fave: Tillamook..just sayin'}
- Steamed, Drained Broccoli
-Warm tortilla in a pan/comal.
-Sprinkle 1/3 of cheese on uncooked/unheated side before flipping. Let it melt, then flip. {this will make the crunchy coating on the outside!!
-Sprinkle another third of the cheese on tortilla. Melt. Add broccoli. Cover with remaining 1/3 of cheese. Fold and devour.. or wait a minute, and slice in pieces to share. {<---I'll growl at you if you try and take mine!}
