Tonight, Mr. Memo and I had an incredible opportunity of attending a special PopUp Dinner, created by Katie's Healing Kitchen, hosted at Wine Vault & Bistro in San Diego.
The entire menu was creatively curated from nature. It was all vegan. It was all delicious.

Wine Vault is very easy to find. Parking is not the easiest, but it's not the hardest either. A few quick times around the block and we found space in a metered spot. The greatest part was it was free being that it was after 6pm.

At the top of the stairs, this is your view. Refreshing, isn't it? Patio tables that give you an outside feel, with the coziness of a covered room.

This will be our table for the night. Front and center, in the middle of the mix. This table gave my date and I the chance to get close and whisper in each others' ears in front of the fireplace by candlelight. We could hear both sides of the room and their conversations.
Bonus: it is impossible to be overlooked sitting here. We've all been seated in that "one" section where we're forgotten about, and ignored. That won't happen at this spotlight table. I might share it with you.. maybe.

We found out about this dinner one day before, but it was meant to be. Look at that menu!
First Course: Colorful Veggie Cabbage Slaw |
The veggies were crispy and fresh, with a delicious asian ginger dressing.
Second Course: Cold Ginger Noodle Salad |
The cold noodles were my husband's favorite. I should have offered him some of mine, but I too was enjoying them more than I should admit. We scraped our plates clean.

I'm not really familiar with tempeh, so it was probably my least favorite, but I wouldn't say I didn't like it. I liked it too, but out of the five courses, I'd pick it last. But I'd still eat it, and I did; all of it.

Being able to finish off 4 courses of savory with a sweet frozen treat with ice cream consistency excites the palate and taste buds, while easing your mind. Vegans know what's up. Vegan is delicious, and makes you feel good. After this dinner, I felt so good. My stomach felt amazing, my mouth was pleased, my mind at ease. I just felt so good. I can't wait to get some more of Katie's Healing Kitchen. Thank you Katie and your entire crew for putting on this dinner, sharing vegan meals with us, and showing us that vegetables have the WOW factor.
Wine Vault & Bistro is a charming location. There is plenty of seating to host a nice-sized dinner or party, but not too large that it loses its intimacy.
