I love tacos. Or, at least I seem to. I eat them all the time. I make them all the time. I'm going to go ahead and say, "I love tacos."
They are so easy and quick to prepare, that it only seems logical to have taco bar as often as possible.
Your entire family, or even just yourself, can have so much fun making these tacos.

I've been eating vegetarian/pescetarian for some time now, but if you love meat the great thing about these tacos is that you could.. add meat! Replace the soyrizo with chorizo, or steak/carne asada, chicken/pollo asado, carnitas, etc. The list goes on.

These tacos are silly easy, like stupid easy {but we don't say that word in our house.}
Corn and Soyrizo Queso Tacos
Ingredients:
Corn tortillas
String cheese or part-skim mozzarella
Canned corn, drained
Soy chorizo aka "soyrizo" {or meaty chorizo}
Shredded lettuce {even bagged salad would work! <---I told you these were easy}
Light sour cream
Optional:
Pinch of salt
Splash of hot sauce/salsa {we love TapatÃo}
Crumbles of queso fresco
Directions:
Warm the tortillas. Prepare "soyrizo" per package instructions. Melt string cheese on tortilla, either in a pan or in the microwave for a few seconds. Layer lettuce, corn, soyrizo, and a dollop of sour cream.
Eat, enjoy, and moan with yummy delight!
