Huevelettes - - aka Omelette Muffins or Baked Egg Cups
If you're like me, we're always looking for easy and delicious meals to keep our loved ones happy and their tummies satisfied.
Huevelettes are made with "huevos", or eggs.
They are super easy to prepare, bake, and grab and eat on-the-go.
Ultra tasty and portable; put one in a zip bag and off you go.
Diced ham - use any meat you want {or go meatless}
After you dice your ingredients {we have ham, half an Walla Walla sweet onion, canned organic mushrooms, and cheese}, sautee the onion and either add ham or put onions in a bowl and then add ham to the pan to heat and brown {if you desire}.
Beat/Mix eggs with milk. Add seasoning.
Divide ingredients into a greased/sprayed muffin tin.

Pop into oven and they'll look like this after a while.
No worries here. These deflate when you remove them from the oven. It's natural.
Tasty gorgeous huevelettes with cheese!
These huevelettes are sophisticated, while being kid-friendly, so they're perfect for any and every occasion!
I couldn't resist.. and wouldn't want to! Eat and enjoy.
Recipe
Huevelettes with Mushrooms and Onions
{Pronounced: wev-e-lets OR wev-lets} <---the "h" is silent
Ingredients
12 servings
- 12 eggs
- 1/2 C milk {I used 1%}
- Salt & Pepper
- 1/2 onion
- 4 slices deli ham
- 1 small can mushrooms
- diced/shredded cheese {as desired}
- veg shortening/nonstick spray for muffin tin
- Preheat oven to 350ºF.
- Grease/spray muffin tin.
- Diced/Chop ingredients to bite sized pieces.
- Saute onion in pan.
- Heat ham in pan, if desired.
- Mix ingredients together in a bowl.
- Spoon/scoop ingredients into muffin tin.
- Pour egg mixture into wells, evenly.
- Bake for 25-30 min.
- Remove from oven and carefully remove from pan to plate/dish.
- Cool slightly and eat.
- Delicious warm or cold.
Here's what I did:
I separated the onion after sauteing. I made 3 meatless huevelettes and 9 with meat.
Tips:
Add sausage, turkey, chicken, salsa, chiles {hatch chiles are in season right now!}.
Be creative and use any of your favorite ingredients to make a meal truly unique your family and friends will love.
Try adding different cheeses: brie, swiss, feta.
