This lemonade stand is the biggest fundraiser in California and one of the top ten Alex's
Lemonade Stands in the country. Since its inception, Alex's Lemonade Stand has raised over $80 million for childhood cancer, and has funded more than 450 research projects at 94 institutions.
They also help families struggling with childhood cancer through a Travel Fund and an annual Educational Symposium.
If you can't attend, click here to donate. Your donation of $50 funds one hour of research. Let's help the Miller Tribe reach their goal of $15,000 this year, getting them to $100,000 for the nine years they've been running.

RECIPE:

- 6 Plum Bites {mini or small plums}
- 2/3C Ricotta Cheese
- 1T honey
- 1 lemon, zested and sliced in half {Meyer, or any kind}
- Champagne grapes {optional, garnish}
- Sweetened Coconut {optional, garnish}
Directions:
-Cut plum bites in half. Remove seeds. Slice off a tiny bit of plum on rounded side so it will sit flat.
-Scoop out enough plum flesh to make room for filling.
-In
a bowl, mix ricotta cheese with honey, lemon zest of 1 whole lemon, and
a small squeeze of lemon juice. There is plenty of lemon flavor in
here!
-If your mixture is too runny, add more ricotta for desired consistency.
-Using a small spoon {or tiny cookie scoop, if you have one} scoop out filling into plum bites.
-Chill in fridge for 20-30 min.
-Serve cold.

Optional:
-Add lemon zest to top for added beauty and flavor.
-Top with coconut shavings and/or champagne grapes.
-Add coconut to the ricotta for added texture and flavor.
