 I love pizza.  I LOVE pizza.  The problem is my pants don't care for it all day every day.  They get tired of eating it and refuse to come out to play.  They protest and refuse to let my thighs and rear end fit in them.

You probably never experience that.. but..{or butt, lol}

Well I came up with a recipe that will help my pants and self-esteem.


I literally JUST ate this for lunch!  It's so good.

 It's super easy, takes no time at all, and is extremely tasty!

It has been way too hot to cook lately in San Diego {nevermind the fires that are happening},  so the fact that I can have pizza in less than 10 minutes without turning the house into a blistery hot furnace, I'm pretty much in heaven.

With just a handful of ingredients and a few minutes you can be devouring this Mamma Mía's Perfect Olive Pizza Sandwich.  Share, or don't.  But do try!

Mamma Mía's Perfect Olive Pizza Sandwich
[vegetarian]

1 sandwich = 1 serving
Weight Watchers 5pp

{I used the mobile tracker to calculate}

Ingredients:
  • 2 slices whole wheat bread {I use Nature's Own}
  • 2T pizza sauce {I used Ragu}
  • 2T sliced olives, drained {I like black}
  • 1 slice low-moisture part-skim mozzarella slice {Market Pantry from Target has deli-style slices}
  • 1 tsp light butter/butter/yogurt butter {optional -I used Brummel & Brown on the same side as the sauce}



Directions:
  1. Toast both slices of bread. 
  2. Spread butter on 1 slice {optional}. 
  3. Spread 2T sauce on one side of bread {same side as butter if you used it}. 
  4. Sprinkle sliced olives on top of sauce. 
  5. Arrange your cheese on top of olives. 
  6. Microwave for about 40 seconds, or until cheese gets bubbly. 
  7. Stop and top the open-faced sandwich with the second slice of bread {this should be dry toast so the cheese will melt into it and stick}. 
  8. Return to microwave for about 20 seconds. 
  9. Let cool/stand up a little..just like a REAL pizza.  :) 
  10. Slice in half and enjoy.

Tips:
- Add whatever toppings you want.  I had sliced olives in my pantry.  Just remember not to fill too thick or your pizza sandwich will fall a-p-a-r-t. 
- Serve with a side of pizza sauce, if desired. {this will add points+ for WW}
- Serve on different kinds of bread for different pizza tastes.  Sourdough would be yummy.. or anything with an asiago cheese baked into it. {this will change the points+ value for WW}
- sprinkle 1 tsp of parmesan cheese before topping with the second slice of bread for more tang and bite.
- add chili flakes for a spicy bite!
- Add turkey pepperoni for a meaty pizza and not too many points.
- Add fresh fruit and veggie sticks for 0pp to bulk up your meal for the hungry bear inside you!
