Mini {Lemon} Ice Cream Scone Sandwiches - Brand New Treat

Yesterday we baked some of these Gluten-Free Meyer Lemon Scones by Sticky Fingers.  We bought them at +Cost Plus World Market .  We've had a few different flavors, and like the flavors of each one, including this gluten-free version.  Go get a box.  We'll be waiting for you when you get back.  You're going to need some.  Trust me.

I picked Meyer Lemon {which just happen to be Gluten-Free}, which flavor did you pick??

After baking these mini scone treats, I really wanted to make something super cute, super special for my TinyBaker {and you}; something I've never seen or heard of before..let alone, tasted.

After a quick Google search.. and no results.. here is what I created::  !!

I had lemon scones on hand, but of course, you can use any flavor you want.  Maybe bake two different batches and mix tops & bottoms!!

These are so good.  I ate like 3 just trying to get the right shots and pictures.  Oh darn.

Slice your mini scone, pick your favorite ice cream, scoop out a mini scoop, top and enjoy!

 

 Yesterday I called them "Mini Scone Ice Cream Sandwiches" and today I'm calling them "Mini Ice Cream Scone Sandwiches".  Whichever name, they are so yummy delicious and worth a million shares!!

You, your friends, family, and kids will go ga-ga over these bite-sized treats!!

This is a treat even the French can enjoy.  I've heard they only take 2 bites and push away their dessert.  Dear France, you're welcome.  No need to push.  Eat, guilt-free.

 

I will serve you a mini ice cream scone sandwich.  Which flavor?

My first one I filled with Thrifty's Cherry Chip Ice Cream, and the second one I ate with Thrifty's Chocolate Malted Crunch.  *looks toward heaven, thanking God for ice cream!*

Another great option for this mini 2-bite-sized treat is how customizable they are.  Think about it.  You can pick whichever flavor scone you want, any flavor ice cream, any kind of topping..

If you prefer Italian gelato, go for it!  That sounds like something I'll be trying soon.
