One of my daughter's and my favorite things to do is to bake together. I call her TinyBaker and she calls me MommyBaker, and we create delicious edible creations that we can share together over laughter, lots of hugs, and messes!
It's almost as easy as pie.. but they're scones! The only extra ingredients needed are vegetable oil and water! This is perfect for kids in the kitchen.
From time to time, I think it's best to think inside the box. Box mixes are my mom's specialty, and now I know why. In a pinch for time, or for a quick easy baking session with your favorite TinyBaker, a box mix is easy, easy, easy!! Did I mention how easy it was?
I mean, even +King Arthur Flour and +Williams-Sonoma sell box mixes. Those are fancy, and delicious.

I'll save the scratch baking for after hours, when I'm in my Ooza zone.. my Omm state-of-relaxation.
This particular box mix for the Gluten Free Meyer Lemon Scones I purchased from +Cost Plus World Market. It's one of my favorite stores!
They were Meyer Lemony tart, and just as "quick & easy" as the box claims.
TinyBaker did nearly everything required to bake these. She poured the mix in a bowl, measured the water and oil {with help}, stirred and mixed with a fork, licked her fingers, scooped, scraped, and squeezed the dough out onto the pan..
Then mommy put the pan in the oven, set the timer, and waited for the *DING*.
They only take 13-15 minutes to bake.
The box says it makes 10 servings, but I made mini lemon scones from a medium-sized scoop, which yielded around 20, more or less.
I'm no expert on Gluten-Free products, but these Mini Gluten-Free Lemon Scones tasted pret-ty good. I'm used to Gluten-Full everything, but I'd buy and try these again.
Another excuse reason to go to +Cost Plus World Market .. twist my arm and call me Susan.

Tradition says to eat scones with clotted/devon cream and jam. Perhaps even eat them with a spot of tea. I had Smuckers Orange Marmalade, so that's what we had.
