Trader Joe's website has a recipe for Spinach Pie that looked so interesting and easy enough that I decided to give it a try. It's not similar to anything I've ever cooked or baked before.
The original recipe called for a refrigerated/frozen pie crust, pre-made and store-bought. I was very close to getting the pack of 2 at Trader Joe's for $3.99, when I just couldn't bring myself to go out on my grocery limb and spend another 4 dollars. As it was, I didn't know what my bank balance was going to be at the end of the night. Anyhow, I knew I could make my own and had everything at home already. Flour. Butter. Salt. Water. For the pie crust I used a recipe by King Arthur Flour for an All-Butter Crust. The ones at Trader Joe's look good too, and I plan on trying them in the future..
The ingredients list for this spinach pie is so simple. That is what drew me in initially.
Spinach. Eggs. Cottage Cheese. Cheddar Cheese.
Preheat your oven to 375ºF.
I made my pie crust, and rolled it out immediately.
Then I mixed the spinach filling and poured/spread it in the pie crust.
My spinach still had some moisture, but after an hour the savory pie had sucked up all the juices and wasn't runny at all! I could even cut it into slices in order to freeze some and put the rest in the fridge for later.

Spinach Pie is served. It will exceed your expectations. It exceeded mine. I was pleasantly surprised that the cottage cheese provided a surprising texture to the meal, and took on the flavors of the other ingredients.
My daughter, TinyBaker, asked for more!! She's 4 and loves the Spinach Pie!!
Organic Spinach Pie

- 1 all-butter crust placed in 9-inch pie dish {KAF recipe}
- 16 oz lowfat cottage cheese
- 8 oz sharp cheddar cheese {or 6 oz cheddar and 2oz mozzarella}
- 1 package frozen organic chopped spinach, defrosted and drained
- 3 large eggs
- 3 tablespoons all-purpose flour
- ground pepper, to taste
Preheat oven to 375º F.
In a large bowl, mix the cottage cheese, cheddar, spinach, eggs, and flour.
Pour and spread mixture into the pie crust.
Bake at 375º for 45-55 minutes.
{Pie may bubble over a little, so put the pie plate on an oven-safe tray, or place a tray below the pie plate to catch any spillage.}
Let sit 15 minutes and serve.
