I eat oatmeal often.  My husband found he is allergic to oats, so I haven't made it as much.  It's even more of a bummer for him since his favorite cookie in the whole wide world was Oatmeal Raisin.

It's Fall, my favorite time of year, and I wanted to incorporate pumpkin somehow into an everyday meal.  I'd never tried pumpkin in my oatmeal, but I have tried pumpkin ravioli, pumpkin spaghetti, pumpkin smoothie, pumpkin spice latte.. so why not? It's an easy way to bulk up your meal while adding added nutrition at the same time. 

Then, the more I was thinking about it, after I scooped the pumpkin, I thought why not try to get it to taste like pumpkin pie which is my favorite pie of all time.  Growing up my mom would bake me a pumpkin pie on the first day of Fall, every year.  I would come home from school and the house would smell delicious.  Then, I'd see my pie and get my first bite right from the center!  That would let everyone know it was MY pie, but also it was favorite part of the pie.  YUMMY!

Pumpkin Pie Oatmeal
Recipe
Serves 1

3/4 Cooked Old Fashioned Oats
2 tsp Brown Sugar
1/2 tsp White Granulated Sugar
1/8 tsp Pumpkin Pie Spice
Sprinkle of Cinnamon
3 T or 1/4 C canned pumpkin {maybe a little less if the pumpkin is overpowering}
1/3 C FF Milk {or whichever you prefer: almond, soy, coconut, half & half, etc.}

Mix and eat.  Yumm.  

{Cook as much oatmeal as you want or need to feed your guests.  This recipe is to prep a single serving.  Everyone likes theirs a bit differently, so let your family and friends have fun with their dish.  They can add a few raisins or maybe some crystallized ginger; perhaps even a dash of maple syrup.}

  2. You know it! ..with a sprinkle of little crispy baked pie crust cookies shaped like fall leaves and mini acorns dusted with Saigon cinnamon and sweet sugar. Yes sir!
