I thought I was going to bake some classic banana bread, so I've had
these ugly brown bananas in my fridge for days to slow the ripening. I
have heard and read that this is okay to do, but I've never actually
done it until now. Brown bananas turn me off.. to eat, but to bake
with, wow. They are perfect. I even went to the store just to get sour
cream.
But these muffins popped up in my Google search, and I knew I was going
to use.. do you remember? How many bowls? 3? 2? Nope! Just 1 Bowl!

This recipe was SOO easy and quick to make.
I followed the recipe {with a few changes}, and baked them for about 24 min. They were already browning at 20 min., but still gooey in the middle, and 30 min. would have been too long.. so keep an eye after 20 minutes.
1-Bowl Banana Chocolate Muffins
makes 12 muffins {I used a medium scoop}

Ingredients:
- 2 very, very ripe bananas, mashed {the riper the better.. once they start to spot, put them in the fridge}
- 4 Tbsp melted butter, unsalted
- 3/4 cup white sugar
- 1 egg {room temp.}
- 1/4 tsp sea salt
- 1 tsp baking soda
- 1-1/2 cups AP flour
- 3/4 cup semi-sweet chocolate chips
Directions:
- Preheat oven to 350ºF.
- In a large bowl, mash bananas, add melted butter and sugar. Mix well. Add the egg and beat/mix well.
- Sprinkle in salt, baking soda and flour. Stir until moist.
- Gently fold in chocolate chips. Be careful not to over mix!
- Divide amongst muffin tins. {greased/nonstick spray, paper/silicone cups, or nonstick pan}
- Bake for 20-25 minutes until golden, and toothpick comes out clean
