Lately, our funds have gotten a bit slim and tight earlier on in the month, making up for the fun that we had the previous month. During this time, I haven't had the energy nor the luxury to go to the store and buy more food/ingredients, so we've been eating "Out of the Pantry".
One thing that we have a TON of is canned pumpkin {just the healthy pumpkin, not the pumpkin pie mix with added sugar} since I found it on a super sale at Ralphs a while back. {I am a fan of pumpkin!} Not a huge fan of box cake mix, but again, we have a few boxes for those spur of the moment cupcakes for Mr. Google's class {oh yeah, he's a teacher!} .. I asked myself ..
.. What can I make with a can of pumpkin and a cake mix? Hmm .. I wonder if I combine the cake mix with the pumpkin how it will turn out? I've made those cakes with a can of soda, I've made them with applesauce instead of oil and eggs .. Surely the pumpkin can be the wet ingredients for the cake. Surely.
So that's what I did. I took a yellow cake mix in a box, mixed it with a 15oz can of pumpkin, and added 2 eggs. The 2 eggs recommendation I found on many reviews and websites. This recipe made 12 regular muffins/cupcakes, baked at 350 degrees F for about 20 min. I tested them with a toothpick, and also touched the top. If they spring back, they're done.
After your muffin cakes have cooled, and you're ready to eat your first of many {I speak from experience!}, get yourself some of this ginger syrup and lightly drizzle the top of your muffin cake. YUMM!! I had my first without the syrup, and although delicious on its own, I had to kick it up a notch. This syrup is like the secret ninja ingredient.
